- VINIFICATION: MECHANICAL NIGHT PICKING, DIRECT PRESSING OF THE GRAPES BY PNEUMATIC PRESS. THE JUICE IS COLD MACERATED (7°C) FOR 48 HOURS FOLLOWED BY FERMENTATION AT A TEMPERATURE OF 12 TO 13°C. MATURED ON ITS LEES IN STAINLESS STEEL TANKS AND BOTTLED AFTER 7 MONTHS
