- VINIFICATION: DESTEMMING AND DIRECT PRESSING OF THE GRAPES BY PNEUMATIC PRESS. THE JUICE IS COLD (7°C) MACERATED FOR 48 HOURS FOLLOWED BY FERMENTATION AT A TEMPERATURE OF 12 TO 13°C. MATURED ON ITS LEES IN STAINLESS STEEL AND BOTTLED AFTER 6 MONTHS
